The traditional art of cooking chicken biryani by the Dum Pukht technique has been refined for centuries. Dum Pukht is a Persian slow oven cooking method, where the food is cooked in a reduced flame for a long time. Also, this technique uses dough-sealed containers for the purpose.
Now, our BBK chefs have refined this wonderful technique and have pioneered the Dum Cooking process. BBK has come up with different mouth-watering biryanis after putting in a lot of research and effort.
This is a dum-style chicken biryani cooked in a handi of marinated boneless chicken pieces with Kerala spices and basmati rice. This biryani is spectacular because the chicken is quite juicy and has been cooked to perfection with all the masalas at the bottom of the handi. To enjoy BBK's authentic flavours, serve it hot.
This is a dum biryani made with handpicked spices from Kerala, 2 year aged, premium long-grained Daawat basmati rice, and high-quality chicken pieces with fried onions as toppings. It combines two styles of Biryani cooking - the Deccan/Hyderabadi style along with the Awadhi touch.
This biryani is prepared with lip- smacking boneless chicken pieces, special spices from Kerala and top-class Daawat basmati rice cooked in BBK style. Its melt-in-mouth, tender chicken pieces make it a favourite of people of all ages.
To prepare this delicious Biryani, Tandoori Chicken with creamy butter gravy is layered on long grain premium Basmati rice, cooked with saffron, spices, milk and ghee. It is dum-cooked, which means it is slowly cooked in a handi and served with masala curry, green chilli, onion rings and lemon wedges. It has a smoky touch of the earthy Tandoor flavours of the chicken, which lends it a distinct taste.
This biryani has Punjabi-style chicken tikka cooked in a spicy gravy layered with long grain Premium Basmati rice. It is dum-cooked in clay handi and served with raita, green chilli, onion rings and lemon wedges.
Apart from these unique offerings, you will also find the traditional regional biryanis of India at Biryani By Kilo. These are classic dishes that render the essence of Mughal cuisine. For example, the Lucknowi chicken biryani is cooked in a sealed handi and has typical Awadhi flavours. The dish has such a rich fragrance it stands out. The spices and the chicken juices of the biryani make it excessively flavourful. On top of it, there are fried onion rings. The use of earthen handis also adds some extra flavour to it.
Another popular version of this dish is the Kolkata chicken biryani. When biryani travelled to Kolkata, chefs added potato and boiled eggs to the marinated chicken, long grain basmati rice and dum cooked in gravy in a sealed handi. Out came the perfect regional variant. In the BBK kitchen, the dough-sealed handis have the best quality chicken and Daawat basmati rice. This makes the dish pleasurable and the whole eating experience satisfying.
Similarly, the regional Deccan flavour is the Hyderabadi chicken biryani's mainstay, making it so popular among biryani aficionados. It includes the traditional basmati rice and spices, and is cooked in the dum style. Also, the BBK version of this classic is served with Salan, Raita, which elevates the experience.
